Chanterelle Fox Salad

One name “chanterelle salad” can combine recipes for completely different dishes prepared from different products. This could be, for example, a salad with Korean, raw or boiled carrots - here it will be called that due to the predominance of orange-colored products. Housewives often place carrots on the very top when making a layered salad. Or it could be a dish designed in the form of a fox with a red fur coat (where, again, the role of the fur coat is played by a carrot). In this case, they can make the whole fox or just its face.

Whatever Chanterelle salad recipe you choose, the only product that will definitely be in its composition is carrots. All other ingredients can vary: potatoes, onions, mushrooms, meat, sausages, cheese, black olives, corn, peas, crab sticks, crackers, and so on.

For example, a simple and quick-to-prepare salad includes chicken fillet, fresh cucumbers, cheese and mayonnaise. Carrots are the default. Garlic and herbs are added to taste. The fillet is either boiled, smoked or fried. Everything is cut into strips, mixed and dressed with mayonnaise. Carrots can also be boiled, raw or Korean. In different variations, fresh cabbage, pickles, mushrooms and sour cream or yogurt are added to the Chanterelle salad instead of mayonnaise.

If a fox in a salad is only used as a decoration, then inside it can be whatever your heart desires. The main thing is that it is flaky, shaped, and placed on a large dish, where there is room for “drawing.”

You don't have to create foxes when making this salad. You can prepare it easily and simply, in portions using a ring - laying out layers on a plate, where the topmost one is grated carrots.
