Freeze kefir in a container that is shaped to fit into your sieve. If you buy kefir in half-liter bags, you can freeze directly in them, then cut them.
STEP 2

When the kefir is frozen, take a large saucepan and place a sieve with 4 layers of gauze in it.
STEP 3

Place frozen kefir on cheesecloth. Now you need to wait for the kefir to melt.
STEP 4

Then cover it with gauze and press down with a small press. You can make knots from the gauze and hang the kefir until the liquid has completely drained. After draining, the curd can be slightly squeezed out.
STEP 5

As a result, from 1 liter of kefir we got 230 grams of soft cream cheese. Now you can add salt, sweeten, pepper, add chopped dill, etc.
