Interesting recipe. This is the first time I’ve seen one like this and I’ll definitely use it. But you can also use this sauce for zucchini (at least for fried and steamed ones, I’ll have to try it here too). Pour tomato juice into a saucepan, you can replace it with tomato paste (0.5 kg). Dilute with water (1.5 liters). Add sugar, salt, vegetable oil, vinegar, garlic and pepper. Try it, maybe you’ll like it?)

Do you have to cut off the skin? So what if you cook them in a baking bag, like chicken, instead of putting them in a baking dish? And if you can cook zucchini this way, then maybe eggplants according to this recipe will turn out no less tasty?
