To celebrate, he prepared several of his favorite recipes and posted photos on Instagram. They were taken in by other well-known practicing vegans who conducted research with aquafaba and realized that it can 100% replace protein in a recipe. The meringue recipe with aquafaba became the first official one. In it, the authors used only it and sugar. In the US and UK, aquafaba is sold in jars as a by-product from the preparation of hummus.
