In addition to the main products listed in the name, this preparation, popular in many countries, contains only spices and preservatives: vinegar, salt, vegetable oil, sugar. Most housewives do not add anything, not even peppercorns. Apparently, out of fear that he would get into trouble with some unlucky person from among the family or guests.
But if everyone in your family tolerates spicy dishes, then it is recommended to take this spice into account to enhance the taste. And also: garlic, bay leaf, cloves in buds. All of them slightly change the flavors of the usual sauce, and it becomes a little newer))
To make lecho from peppers, tomatoes, carrots, and onions perfect, choose ripe, juicy, meaty, sweet, bright vegetables for it. There is no need to save and add just to get something. Except that you can evaluate tomatoes less critically - still chop them with a blender. Just make sure they are not spoiled or sour.
It's your choice to peel the tomatoes or not. In a puree state, it will not be particularly noticeable. But you can also please the perfectionist in you, fortunately, the procedure is quick and uncomplicated. Pour boiling water over the tomatoes or keep them in it for a few seconds. Afterwards, remove the skin without any problems. An immersion blender copes with the task of turning these vegetables into a homogeneous mass with lightning speed. Now mix all the spices into it along with salt and sugar. Let it boil. Cook, stirring, for 20 minutes. Now you can remove the bay leaf, cloves and pepper with a slotted spoon.
In a frying pan, fry the diced onion in oil (here you can choose how to cut it: half rings, quarter rings). Add carrots in cubes or strips to it. Fry, stirring, until done. We combine both masses, add chopped bell pepper. Boil and simmer over low heat for 20 minutes. Now just pour in the vinegar and you're done. You can put it in jars and roll it up for the winter.
Overcooked peppers readily lose their skins. The undercooked one crunches in your teeth. The one that is cooked properly can be easily broken in half with a fork, but does not fall apart, and the skin does not slide off. It may turn out that your lecho will need to be stewed less than indicated in the recipe (or more). Therefore, always focus on the readiness of the pepper.
