Add peeled and randomly chopped tomatoes and thin chili pepper rings to the onion and garlic.4. Place the chicken meat cut into cubes in a frying pan with vegetables and, stirring, fry for about 5 minutes.5. Add chorizo slices, pieces of fish, squid, octopus, shrimp and mussels. Simmer for 6-8 minutes.6. Add rice. Add salt, add spices (saffron, curry, cardamom, paprika, etc.)7. Pour in broth and wine. Cook over low heat until the liquid has completely evaporated.8. Helpful tips:• Rice is not soaked before preparing paella in the classic recipe.• Expensive saffron can be replaced with curry seasoning.• For vegetables, it is better to use green peas, juicy bell peppers, and green beans. Hot peppers and canned corn can be added.• If there is no ready-made broth and there is not enough time to prepare it, then it is better to fill the paella with plain water rather than use bouillon cubes.
