    Cut the tomatoes in half and remove the stem. Cut them into slices or cubes, here again it’s a matter of taste. You can first remove the skin from them.

    Cut the bell pepper and remove the core and seeds. Cut the pulp into strips. I deliberately took yellow peppers to make the dish brighter. But peppers of any other colors will also work.

    Finely chop the greens. I have dill and parsley, you can use any other - green onions, basil, cilantro.

    Grate the cheese on a medium grater.

    Heat a frying pan over medium heat. Pour vegetable oil on it for frying. Add onion. Fry it, stirring, until translucent, about 5 minutes.

    Add tomatoes and peppers to the onions. Fry everything together, also stirring, for a couple of minutes.

    Wash and dry the eggs. Beat them into a separate bowl. Shake with a fork to combine the white with the yolk. Pour the eggs over the vegetables, distributing them evenly throughout the pan. If you don't like scrambled eggs, crack whole eggs straight into the pan, like you would for a fried egg.

    Salt and pepper the scrambled eggs, sprinkle cheese and herbs on top. Turn the heat to minimum, cover the pan and cook the eggs until cooked - you can make them very hard or leave them slightly liquid, as you prefer.
