Rinse the potatoes and carrots thoroughly under running water, rubbing the skins with a hard sponge or a special brush for root vegetables. Fresh herbs will only be used for serving. You can use absolutely any: parsley, dill, cilantro or green onions.

    Peel the carrots using a vegetable peeler and grate on a coarse grater. Finely chop the onion. The onion can also be cut into thin half rings.

    In a non-stick frying pan with sunflower oil, fry the onions and carrots until golden brown. Stir the roast occasionally to prevent it from burning.

    Peel the potatoes and cut into quarters, about half a centimeter thick. There is no point in making thinner slices because the potatoes after heat treatment may turn into a kind of mashed potatoes.

This is exactly the version of stewed potatoes with carrots and onions in a frying pan that I needed, quick and not fried. I prepared it as a side dish for fish cutlets, the combination turned out well. I left more gravy so that it would not only be tasty, but also juicy. And my son mashed the side dish with a fork and it turned out to be a red puree) I prepared a small portion, just all the ingredients fit in a 1.5 liter saucepan. This saucepan is good because you can fry in it without any problems. That’s why I simmered onions and carrots in it and stewed all the vegetables. I added almost no spices, just a little pepper mixture for flavor. I really enjoyed this dish! The vegetables are tender and tasty, and it turned out quite filling. I really liked about the “smooth edges of the slices”; this phrase alone convinced me to cook potatoes according to this recipe! I also love it when potatoes have smooth edges)

I also discovered for myself that potatoes turn out more beautiful with carrots. I just take raw potatoes, cut them in any way and after the first turning in the frying pan, add onions and carrots. Yes, before frying, try frying the garlic slices in an empty frying pan with oil and then removing them, you will get very aromatic potatoes.
