    How to make a kefir pie without yeast? Measure out the required ingredients for the dough. Kefir is suitable for any fat content. Take it out early so it's not cold. Take odorless vegetable oil.

    Pour kefir into a bowl, add soda, stir. Leave the mixture until numerous bubbles appear on the surface. This is the reaction of quenching soda when interacting with lactic acid.

    Add salt and vegetable oil to kefir. Stir.

    Sift flour into a bowl. Sifting will remove possible unnecessary particles from the flour and enrich it with oxygen. As a result, the cake will rise better during baking. Do not pour out all the flour at once; you may need less than the specified amount. It depends on the fat content of kefir and the properties of flour. If, on the contrary, the dough is not thick enough, add a little flour when kneading.

    Knead the dough. It should hold its shape well, but be soft and tender. Wrap the dough in a bag or cling film and leave on the table for 20-30 minutes. During this time, the gluten will swell and the dough will be more pliable and elastic.

    Prepare the pie filling. Peel the potatoes in advance and boil in salted water until tender. Check the readiness of the potatoes with a knife. If it's soft, it's ready. Drain the water and cool the potatoes. You can take cottage cheese of any fat content, depending on your preferences.

    Wash the parsley and dill and dry well. Remove any rough, thick branches. Finely chop the greens. You can also take green onions or cilantro.

    Mash the boiled potatoes. I did this with a fork. But if you wish, you can make the structure of the filling more uniform. Then mash the hot potatoes into a puree with a masher and cool. And pass the cottage cheese through a blender.

On a day off you always want to pamper your family with something delicious. And if the recipe is made from inexpensive ingredients and is not troublesome, then why not cook it?! The dough turned out perfect - soft and elastic. I added a little more cottage cheese to the filling; I should have used the leftovers. I boiled the potatoes in the microwave, then mashed them with a fork; the cottage cheese was pasty, so I couldn’t put it through a blender. I made half a portion, but the pie turned out to be quite large, 23 cm in diameter. Julia, of course, everything is delicious, thank you for the recipe. Tell me, what other fillings can be used for this dough? As I understand it, any kind, including apple ones, right?
