    How to make lean pizza in the oven at home? First, prepare the ingredients for the dough. Pour yeast, sugar, and a couple of tablespoons of wheat flour into a deep bowl. Pour in a glass of warm water. The water should be just warm, but not scalding, otherwise the yeast in it will die. Mix everything until a homogeneous mixture is obtained and leave for 15 minutes in a warm place.

    Sift the wheat flour to saturate it with oxygen. This will make the dough fluffier and more tender. Pour vegetable oil into the bowl with the yeast mixture and stir. Start adding sifted wheat flour in small portions, stirring the dough each time. Depending on the quality of flour, you may need a little more or a little less.     When the dough becomes difficult to mix with a spatula, turn it out onto a floured work surface and continue kneading the dough with your hands. Knead until the dough stops sticking to your palms. It should be elastic, smooth and soft. Place the dough back into the bowl, cover with a towel and leave in a warm place for an hour.

    Meanwhile, prepare the ingredients for the filling. You can use any mushrooms: champignons or wild mushrooms, fried or pickled. I added pickled whites. Fresh mushrooms can be fried with onions. If pickled mushrooms are used, then grated carrots with finely chopped onions can be fried in a frying pan to add a pleasant flavor to the vegetable-fried pizza.

    You can also use vegetables for pizza that you like and have on hand. And I used tomatoes and bell peppers. Wash the tomatoes, cut into circles, small cubes or slices if the tomatoes are small.

    Wash the bell pepper, cut out the seed pod, and cut the flesh into strips. To add a pleasant sourness, you can add a small piece of finely chopped pickled cucumber or olive.

    Punch down the risen dough and proceed to baking the pizza. Roll out the dough into a circle according to the size of the mold. Turn on the oven to 180 degrees.

I decided to devote my day off to making homemade Lenten pizza. In a large bowl I combined 0.5 tablespoons of dry yeast, a pinch of salt and sugar, two tablespoons of flour, mixed, poured the mixture with half a glass of warm water and left for 15 minutes. Then I added one glass of flour to the dough, gradually mixing it in little by little. I kneaded a not very tough dough, a little sticky. But this is exactly the result I needed. I wanted the pizza dough to be soft and fluffy. After kneading, the dough stood warm for an hour and a half. It rose well, the fermentation process was still ongoing. However, I had to put the dough on a cutting board to prepare the pizza. I took a small pizza pan, about 30 centimeters in diameter. I cut half of the dough and put it in the freezer to cook next time. Rolled out the remaining dough and placed it in the mold. I really liked the photo of the pizza on the recipe - with small sides curved up. I tried to repeat this form, and it worked. I put the filling on the dough - mushrooms fried with onions (I used frozen mushrooms), tomatoes cut into thin slices. I couldn’t resist and sprinkled grated cheese on top of the pizza (there was no cheese in the recipe). I put the pizza in the oven. Half an hour later the pizza was ready. It turned out very tasty! The dough is simply amazing! Soft, fluffy! And the filling was a great success! Thank you so much for the wonderful recipe!
