Sift the flour into a bowl, add water at room temperature and vegetable oil, knead a soft, elastic, non-stick dough (keep in mind that you may need a little more or less flour), roll it into a ball, wrap it in cling film or a bag and send it to refrigerator for an hour.

    Prepare the necessary ingredients for the filling. Wash the greens and dry. I used dill and parsley, but you can use any greens you like. Chop finely, break feta cheese or cheese into small pieces.

    Remove the dough from the refrigerator, knead it a little and divide into three equal parts.

    Roll each piece into a ball.

    Dust the worktop and rolling pin with flour and roll each ball into a thin layer about 30 cm in diameter.

    Spread a third of the herbs and feta cheese on the future flatbread.

    Fold the top and bottom edges first, as in the photo. This must be done carefully so that the thin dough does not tear.

    Then fold the left and right edges, you get something like an envelope. Also form the rest of the cakes. Fry the flatbreads in a hot frying pan for 4-5 minutes on each side, usually these flatbreads are fried without oil, but if you want, you can grease the frying pan a little with oil. Grease the finished flatbreads with butter. These flatbreads are best eaten hot. Turkish gozleme flatbread is ready, bon appetit!

I made gozleme Turkish flatbreads with cheese for a snack for my husband at work and for my child at school. I used a little more flour (high grade), 210 grams. The dough turned out tender, soft, elastic. I “rested” the dough for about 40 minutes. For the filling I used gouda cheese and parsley. I fried the flatbreads over medium heat in oil for about 2.5 minutes on each side. The flatbreads turned out soft and tasty. My son and husband were pleased. I really liked that simple ingredients turned into an appetizing and satisfying snack. Thank you very much for the recipe!
