Place the circles in a deep container, add two heaped tablespoons of salt, add cold water and stir everything until the salt dissolves. Salt water will draw out the bitterness from the blue ones and thanks to this procedure, when further frying in a frying pan, the eggplants will absorb significantly less vegetable oil.

    To prevent the circles from floating to the surface and being completely immersed in salt water, cover them on top, for example, with a plate and place a light weight. Soak the eggplants in water for about 20-30 minutes.

    Drain the water and lightly squeeze the blue ones with your hands.

    Cut the tomatoes into slices slightly thinner than the eggplants (about 5-7 millimeters).

    Prepare a sauce for greasing the eggplant; it will add juiciness and flavor to the finished dish. Place mayonnaise, pressed garlic and allspice into a small container. Mix everything thoroughly.     I added frozen herbes de Provence mixture and a pinch of nutmeg to the sauce.

    Next, you can cook according to two options of your choice. The first cooking option without pre-frying: place the eggplant slices immediately after soaking on a baking sheet lined with baking paper. The second option with pre-frying: pour vegetable oil into a frying pan, heat it over high heat and fry the eggplant slices on one side until golden brown.

    I tried both options, but the second one was more to my taste; the finished dish was richer and more complete. Place the eggplant slices on a baking sheet.

I baked in an electric oven on the “top-bottom” mode at 200 degrees for about 20 minutes. Then I changed the mode to convection and baked for about five more minutes, until the cheese was browned and had an appetizing golden crust. For dinner, my husband and I baked eggplants with tomatoes, cheese and garlic in the oven in circles. This is delicious! We missed eggplants and wanted to cook them somehow unusual. Pre-frying followed by baking is simply the perfect solution! Fry until golden brown, then place the eggplants on a paper towel to absorb excess fat. I used homemade mayonnaise, it is thick and tasty. My garlic is fresh with a bright, appetizing aroma. The cheese is ordinary Russian, it melted perfectly. I baked the vegetable towers for 20 minutes and another 5 minutes under the grill to golden the cheese. It turned out very juicy! The cheese stretches on the bottom, and the crust on top is crunchy. The vegetables were well baked without losing their shape. It was delicious for us both hot and cold. Thanks for the recipe!

I was looking for a good eggplant recipe for a long time, and then I came across a wonderful recipe for Baked Eggplant.
