  1. STEP 1

    STEP 1

How to make dumplings with Adyghe cheese? Prepare the necessary ingredients for making the dough. Take the highest grade wheat flour. Vegetable oil without odor is better.

  2. STEP 2

    STEP 2

Sift 2.5 cups of flour into a wide, spacious bowl with high sides. Why exactly this one? It will be convenient to knead the dough in it. In addition, when sifting, the flour will not spill onto the table. Thanks to sifting, the flour will be saturated with oxygen, and the finished dough will be softer and more elastic.

  3. STEP 3

    STEP 3

Add salt to the sifted flour and mix.

  4. STEP 4

    STEP 4

Pour in vegetable oil to make the dough more elastic. Stir lightly.

  5. STEP 5

    STEP 5

Boil the water. Carefully, so as not to burn yourself, pour boiling water into the flour.

  6. STEP 6

    STEP 6

Quickly mix all ingredients with a spoon. Leave the dough on the counter to cool.

  7. STEP 7

    STEP 7

When the dough becomes warm, add the egg to it and mix first with a spoon.

  8. STEP 8

    STEP 8

Then begin kneading with your hands, adding remaining flour as needed.

  9. STEP 9

    STEP 9

The dough will still be very soft and sticky. Place the dough on a floured surface and continue kneading. Dust the table with flour as needed. Please note that more flour may be required. You can read more about flour and its properties in a separate article, link at the end of the recipe.

  10. STEP 10

    STEP 10

Knead the dough until homogeneous and smooth. Wrap the dough in cling film and leave to rest for 30 minutes. During this time, the gluten in the flour will disperse, and the dough will become pliable and elastic.

  11. STEP 11

    STEP 11

While the dough is resting, make the filling. For it, take soft cheese such as Adyghe, Suluguni. It is better if the cheese is not too salty. I used parsley as greens; dill or green onions would also work.

  12. STEP 12

    STEP 12

Grate the cheese or mash it with a fork.

  13. STEP 13

    STEP 13

Wash the greens, dry them, chop finely.

  14. STEP 14

    STEP 14

Add the yolk and chopped herbs to the cheese.

  15. STEP 15

    STEP 15

Mix everything well. The filling is ready.

  16. STEP 16

    STEP 16

Divide the rested dough into 2 parts. Wrap one back in film to prevent it from drying out. Roll the other one into a layer on a table sprinkled with flour. The dough is very soft and easy to roll out.

  17. STEP 17

    STEP 17

Using a round notch of the desired diameter, cut out blanks for dumplings from the dough. You can cut the dough differently. Divide it into parts, roll each part into a sausage, which is cut into pieces. Then roll each piece into a circle.

  18. STEP 18

    STEP 18

Place the filling on the dough circle.

  19. STEP 19

    STEP 19

Bring the edges of the dumpling together and seal well.

  20. STEP 20

    STEP 20

You can make a curly tuck to make the dumplings look more beautiful. In addition, this will additionally seal the edges of the dough.

  21. STEP 21

    STEP 21

Place the finished dumplings on a floured surface.

  22. STEP 22

    STEP 22

How to cook dumplings? Boil water in a saucepan of suitable volume. There should be enough water so that the dumplings float freely during cooking without sticking to each other. Salt the water, add the dumplings, stir. Over high heat, wait until it boils. During this time, it is worth stirring the dumplings so that they do not stick to the bottom of the pan.

  23. STEP 23

    STEP 23

Cook the dumplings at a moderate boil. Cooking time depends on their size, on average 10-12 minutes from the moment of boiling. Remove the finished dumplings with a slotted spoon onto a plate.

  24. STEP 24

    STEP 24

Serve dumplings with butter or sour cream. Bon appetit!

I'm interested in the recipe for dumplings with cheese. Never tried it before. I love working with choux pastry, it’s always a success! Instead of parsley, I added dill to the filling. Served with butter and sour cream. Everyone liked the dumplings - the cheese filling is very tasty and piquant! Thanks for the recipe, Julia!

Wow! We need to come up with unusual dumplings with cheese! Dumplings with cheese are quite easy to prepare. During cooking, the cheese inside the dumpling melts, creating an original filling. Such dumplings were liked not only by adults, but also by our little ones, who do not like cottage cheese or meat. I served these dumplings with sour cream and herbs. Thank you so much for the recipe!
